Yes, and it is not close. Modern dish detergent is a mix of anionic and non-ionic surfactants sitting somewhere around pH 7 to 9 in the bottle and lower still in a sink of water, and a cured seasoning film is a cross-linked polymer that surfactants have no chemical route into. Registry pans washed with detergent every day for three decades carry some of the thickest, hardest films measured on this site.
The rule you inherited is real. It is just old. Soap in 1890 meant tallow boiled with wood-ash lye and sold as a bar that often still carried free alkali, and free alkali plus warm water plus time will absolutely saponify a fat film. Grandmother was right about her soap. Her soap is not in your kitchen.
None of that means every cleaning method is safe. Four of the nine below take a pan back to bare grey iron, and two of those are things people do on purpose. Here is the whole set, rated.
Where the never-soap rule actually comes from
Saponification is the reaction that made the rule. Sodium hydroxide attacks the ester bonds in a triglyceride and converts fat into soap and glycerol, which is how soap gets made in the first place. A bar of lye soap with unreacted alkali left in it carries that reaction into your sink, and a pan whose seasoning was still soft — thin, young, only lightly polymerised — loses film to it.
Two things changed. Household cleaning moved off saponified bars and onto synthetic detergents in the 1940s and 50s, which lift grease by surrounding it in micelles rather than by chemically converting it. And the pans themselves changed: the machined foundry pans of the Griswold and Wagner era carried a hard film on a near-mirror surface where a modern sand-cast pan carries a thicker, softer film sitting in a pebbled texture.
The instruction outlived both. What kept it alive is the identification problem that runs through this whole site — when a method fails, nobody can tell whether the method was wrong or the pan was different, so the safest-sounding folk rule wins by default and gets repeated for another generation.
What you are actually trying to protect
Seasoning is not oil. It is what oil becomes after heat drives off the volatile fraction and the remaining fatty acid chains oxidise, cross-link and lock into a solid film bonded to the iron. Chemists call the family of reactions autoxidative polymerisation. The result behaves much more like a thin varnish than like grease.
That single fact answers most of the questions on this page. A varnish does not dissolve in water. It does not dissolve in surfactant. It is not going anywhere because you ran a brush over it.
It does come off three ways. Strong alkali above roughly pH 12 will hydrolyse it — that is why oven cleaner and a lye bath both work as strippers. Heat above about 700°F pyrolyses it to ash and loose carbon. And a hard enough abrasive removes it mechanically along with a little iron. Anything that does not do one of those three is, to a cured film, weather.

The dishwasher does not fail because of the detergent alone; it fails because a cast iron pan comes out of a rinse cycle hot, wet and unattended, and orange bloom starts inside the hour. People who have pulled a pan out at the end of a cycle and towel-dried it immediately report far less damage, which fits the mechanism.
And the self-clean cycle is the single most common way a good vintage pan gets destroyed. It works — it is the fastest strip there is — but a 2.5 mm Griswold wall going from ambient to 880°F and back on a domestic oven's own schedule is exactly the thermal profile that cracks pans. Registry entries lost to self-clean tend to show a hairline running from the handle boss.
Reading the five soils
Half the bad advice online comes from people describing different problems with the same word. Sort yours first.
- Fond — the brown, water-soluble stuck bits left after a sear. It is flavour, it is not damage, and it comes off with hot water alone if you get to it while the pan is still warm.
- Grease film — a slick, slightly tacky coating of oil that never got hot enough to polymerise. This is the one soil where detergent genuinely outperforms everything else, because free oil is exactly what surfactants are built to lift.
- Burnt sugar — glossy, black-brown, welded on. Sugar caramelises then carbonises well below seasoning temperature, so a simmer-and-scrape gets it off without touching the film underneath. Do not attack it with abrasive first.
- Fish odour — trimethylamine and its relatives, held in the film rather than sitting on it. Alkali neutralises the amine, which is why a baking soda paste outperforms detergent here. A 10-minute dwell beats scrubbing.
- Black residue — dark smears on a paper towel or a wiped potato. On a young pan it is unbonded carbon and soft polymer, harmless and self-limiting. On an old pan it is usually a failing top layer flaking. On any pan it is worth a chainmail pass, which removes the loose material rather than sealing more oil over the top of it.
The four things that genuinely strip a film
Worth writing down, because everything else on the internet is noise around these four.
Sodium hydroxide at working strength. Oven cleaner, a lye bath, or a caustic soak. Hydrolyses the polymer straight off the iron over 12 to 48 hours, leaves the metal untouched and is the collector's default for a heavily crusted pan. It is also the reason the folk rule exists at all.
Pyrolysis above roughly 700°F. Self-clean cycles, a very long session directly in coals, a pan left on a high burner and forgotten. The film turns to ash and grey iron appears. Cheap and effective; hard on thin walls.
Abrasion. Steel wool, wire wheels, sanding. Fast, unselective, and it changes the surface texture permanently, which changes how the next film keys onto it.
Electrolysis. A low-voltage DC bath that lifts rust and carbon at once. It is the gentlest option for a badly pitted pan because it removes nothing but oxide and deposit, and it does not care how thick the crust is.
How often any of this needs doing
Maintenance load scales with use and with the air the pan lives in. A skillet hanging over a gas hob in Arizona and the same skillet in a coastal kitchen in Cornwall are on different schedules, and the difference is not small.

A pan cooked on daily needs less deliberate seasoning work than one used monthly, because cooking is seasoning. The most common failure in that grid is the oil wipe, not the wash. Too much oil left on a stored pan does not cure — it oxidises slowly into a sticky varnish that fingerprints and smells stale, and then people blame the detergent they used a week earlier. Buff until the towel comes away clean and the pan looks dry rather than glossy.
Black residue on the paper towel
This is the single most-asked question that follows a wash, so it gets its own answer. Wipe a clean, dry, seasoned pan with a white paper towel and you get grey-black marks. That is normal on almost every pan and it is not soot, not rust, and not dirt.
On a pan seasoned in the last few months, it is unbonded carbon and low-molecular-weight polymer that never fully cross-linked — the loose top of the film. It reduces with each cook and stops after a dozen or so. Do not strip a pan over it.
On an older pan that suddenly starts marking heavily, something changed: a coat applied too thick, a session run past 700°F, or acidic food left sitting. The fix is a chainmail pass to take off the failing layer, a wash, a dry, and one thin stovetop coat. Sealing a new layer over loose material just gives you a thicker loose layer.
One genuine warning sign: black flakes with a dull grey pit underneath, where the flake lifts off in a sheet and you can see clean iron. That is the film delaminating rather than shedding, and it needs a strip in that zone rather than a touch-up.
The rules, restated with their conditions
Every folk rule about cast iron cleaning is true under some condition. State the condition and the rule becomes useful instead of superstitious.
- "Never soap" — true for saponified bar soap with free alkali, true for a film under about two weeks old, false for modern dish detergent on a cured film.
- "Never soak" — true, and this one holds almost everywhere. Water sitting in contact with iron through a seasoning film's micro-pores is how bloom starts. Fifteen minutes is a risk; overnight is a rust job.
- "Never use water" — false, and it always was. Water at cooking temperatures flashes off. The danger is standing water, not water.
- "Never scrub" — depends entirely on what with. Chainmail and salt work with the film; steel wool works against it.
- "Never put it in the dishwasher" — true, but for the drying and the dwell time as much as the detergent. A pan pulled out at cycle end and dried on the hob survives; one left to cool wet does not.
- "Dry it on the burner" — true, and it is the most underrated instruction in the whole set. Towel drying leaves water in the sand-cast texture. Ninety seconds of heat does not.
