How to Season Cast Iron: Oven Temperature and Coat Schedule by Pan Class
Wipe on a semi-drying oil, wipe it back until the pan looks dry, and bake at 450-465°F for 60 minutes with the pan upside down on the middle shelf. Cool it in the closed oven. Repeat until the surface closes — three or four coats on a machine-ground face, five or six on a coarse sand-cast one. The target temperature is the oil's smoke point plus 25-50°F, which is why the oil you choose sets the oven dial.

That is the whole process, and repeating it is most of the skill. What changes between pans is the number of repeats and the exact set point, and both of those follow from two things you can establish in a minute: what the cooking surface looks like, and which oil is in your hand.
The reason schedules disagree so violently online is that almost nobody states the pan class they were working on. A three-coat protocol developed on a machine-ground 1930s skillet applied to a coarse modern import gives a patchy film, and the person who tried it blames the schedule. The schedule was fine for the pan it was written for.

The process in eleven lines
- Wash the pan with hot water, detergent and a stiff brush. Yes, detergent — modern washing-up liquid contains no lye and will not strip a cured polymer film.
- Dry it on the hob over low heat until every trace of water has gone, including out of the handle root. Two minutes past looking dry.
- Set the oven to your target temperature and let it come up fully. Allow 15 minutes past the beep on most domestic ovens.
- Pour about half a teaspoon of oil into the warm pan and work it over every surface with a lint-free cloth or paper towel — inside, outside, handle, rim, underside.
- Now wipe it all back off with a clean dry towel, as though you had made a mistake and want the oil gone. What remains in the surface is the coat.
- Put the pan in upside down, on the middle shelf, with foil or a tray on the shelf below to catch drips.
- Hold at temperature for 60 minutes. Set a timer rather than guessing.
- Switch the oven off and leave the pan inside with the door shut until it is below 150°F. Slow cooling in a dry cavity, not a fast pull onto a cold worktop.
- Inspect. The colour should have moved a step darker and the surface should look dry, not shiny-wet.
- Repeat for the coat count your pan class requires.
- Cook in it. Fat, heat and repetition build a better film in a month than any oven schedule builds in an afternoon.
The schedule
Four starting states, because they need four different sequences. Stripped bare iron has no film at all and needs a moisture-driving pass first. A factory pre-seasoned pan already has a thin sprayed film that only needs building on. A machine-ground vintage face closes fast and can be over-coated, which fills the tool marks and loses the surface you bought the pan for. Touch-up is what you will actually do most often.
Set points below assume a semi-drying oil in the grapeseed and canola band. If you are using something else, adjust from the lookup table in the next section.

Do not mix blocks — a machined vintage pan run through the five-coat bare-iron schedule ends up smoother-looking and duller-performing than it started. The dry pass at the top of the bare-iron block is not optional and it is the step people skip. Stripped iron flash-rusts in humid air within twenty minutes, and an orange bloom trapped under coat one becomes a permanent flaw in the film.
Cooling in the closed oven does real work too. A pan pulled hot into a kitchen with any humidity pulls condensation onto a film that has not fully set, which is the origin of the blotchy dull haze people report on coat two.
Set the oven from the oil, not from a number you read
The rule is smoke point plus 25-50°F, held for an hour. That drives the film past the point where volatiles have left and the cross-linking network has formed all the way through the thickness rather than just at the surface.
Where the rule fails is at the top of the range, because domestic ovens stop. Several excellent high-smoke-point oils simply cannot be cured properly in a home oven, and there is nothing to be done about that except pick a different oil.

Closure is the point at which the film presents a continuous flat surface to food rather than a coating that follows the casting texture. It is a real, observable transition and it happens at a different coat count on every surface class.

This is where almost every failed seasoning goes wrong, and it is worth being blunt about it. After you have oiled the pan, wipe it with a clean dry cloth until the pan looks and feels dry. Not glossy. Not damp. Dry.
What you are aiming for is a film so thin that it is essentially invisible — a few molecules of oil clinging in the surface texture. That thin layer has oxygen access across its whole thickness and cures into a hard, well-bonded solid.
A thick layer does not. The surface skins over, the underside stays liquid, and what you get is a gummy sandwich that stays tacky no matter how long you leave it in the oven. Every visible pool, run and puddle on a finished pan started as oil somebody could not bring themselves to wipe off.
A rough test: after wiping, drag a clean white paper towel across the base. If it comes away with a visible oil stain, keep wiping. Most owners underestimate this by a factor of three or four on their first attempt.
The corollary is that a half-teaspoon of oil is genuinely enough for a twelve-inch skillet. The bottle should last years.
Stovetop touch-up does most of the real work
Oven seasoning builds the base. Cooking maintains it, and stovetop touch-up bridges the two in about eight minutes without heating the house.
After washing and drying, put the pan on medium heat until water flicked in skitters and evaporates instantly. Take it off, add about a quarter-teaspoon of oil, spread it with a folded towel held in tongs, wipe it back to almost nothing, and return it to the heat until it stops smoking. Then let it cool on the switched-off hob.
That eight-minute routine after any acidic cook — tomatoes, wine, citrus, vinegar — will keep a film alive indefinitely. Acid does not destroy seasoning, but it thins it, and thinning goes unnoticed until a patch opens up.
The thing nobody says out loud: a pan in regular use with fat rarely needs oven seasoning again after the initial build. Full oven cycles are for restorations, for stripped pans and for repairing damage. If you are oven-seasoning a working pan every few weeks, something else is wrong and the sticky-pan diagnosis is the place to look.
What goes wrong the first time
- Too much oil. Overwhelmingly the top cause. The pan comes out tacky, streaky or patchy-glossy, and the fix is a hot wipe-back and a rebake with no extra oil.
- Oven never got there. Domestic ovens undershoot the dial routinely. A cheap oven thermometer on the middle shelf costs less than a bottle of grapeseed and settles the argument permanently.
- Pan the right way up. Excess oil pools in the base and forms a glossy skin that never sets. Face-down, always.
- Dwell cut short. Forty minutes gives a surface cure over an uncured core. Sixty is the number.
- Pulled hot into a humid kitchen. Condensation lands on a film that has not finished and leaves a dull white haze.
- Handle root skipped. It is the thickest section on the pan and the slowest to reach temperature, which is why it is the most common place to find a tacky patch on an otherwise perfect coat.
- Expecting nonstick at coat one. Coat one on bare iron is meant to look patchy and straw-coloured. That is the process working.
One genuine warning that belongs on this page rather than buried: never use a self-clean oven cycle on cast iron. It runs at 850-900°F, manufacturers advise against it, and it can warp or crack a casting outright. There is no version of that risk that is worth the time it saves.
