Cast Iron Sticky After Seasoning: Eight Causes Diagnosed by Feel
Tacky all over means the oven never reached polymerisation temperature. Gummy patches mean too much oil. Sticky only when hot means an under-cured film; sticky only when cold usually is not seasoning at all, it is cooking-fat residue. Only one of the eight faults on this page needs a full strip, and it is the one caused by using a non-drying oil.

Do not strip it. Roughly seven times out of eight, a sticky pan is fixed by a hard wipe-back and one more hour in the oven with no additional oil.
Sticky is not one fault. It is five root causes producing eight distinguishable symptoms, and the symptoms are separable by feel and by where on the pan they appear. Tacky and uniform is a temperature problem. Gummy in patches is a quantity problem. Streaky runs pointing downhill are a gravity problem. Sticky only at temperature is a cure-depth problem. Sticky only when cold is, more often than not, a cleaning problem wearing a seasoning costume.
The distinction that saves the most time is the last one. A great many pans described as sticky have a perfectly sound cured film with a layer of soft cooking fat sitting on top of it. Stripping that pan destroys good seasoning to solve a problem a stiff brush and hot water would have handled in twenty seconds.

Name the fault before you touch it
Three observations, in this order. First, is it sticky everywhere or in patches? Uniform points at temperature or dwell. Patchy points at application.
Second, is it sticky hot, cold, or both? Warm the pan to around 200°F and press a paper towel against the base, then let it cool completely and do it again. A film that grips warm and releases cold is under-cured. A film that grips cold and releases warm is fat residue, because fat softens and mobilises with heat while a cured polymer does not change at all.
Third, where is it? Handle root and the corner where the wall meets the base are the slowest-heating and lowest-draining parts of the pan, and faults that appear there and nowhere else are almost always about heat access or pooling rather than chemistry.

Excess oil produces a gummy pan that feels exactly like a non-drying-oil failure, and people strip pans over it constantly. The tell is the towel test: excess oil comes away brown on a warm white towel, and a non-drying film smears without ever fully transferring.

The mental model that fixes this permanently: you are not applying a coating, you are contaminating the surface with the thinnest possible layer of oil and then converting it to a solid.
A film thin enough to cure has oxygen access across its full thickness. Every molecule can participate in the oxidative cross-linking that turns liquid oil into a hard network. Thicker than that and the outside skins over first, sealing the inside away from air, and what is trapped underneath stays liquid or gels into something soft and permanently tacky.
You cannot bake your way out of it. Longer dwell does not help, because the problem is not time, it is oxygen access. Higher temperature makes it worse, because it skins the surface faster.
What does help is heat plus mechanical removal. Warm the pan to around 200°F, which softens the gummy layer, and wipe it hard with clean dry towels, changing them as they load up. Keep going until a fresh white towel comes away clean. Then rebake with nothing added.
The amount that is actually correct will feel wrong the first several times. Half a teaspoon for a twelve-inch pan, spread everywhere, then removed until the pan looks dry.
Cold-sticky is usually not seasoning at all
Here is the case that saves the most good pans from unnecessary stripping.
Cured seasoning is a solid polymer. It does not soften meaningfully at kitchen temperatures and it does not soften on the hob either. So a film that is tacky at room temperature and slick when hot is behaving like a fat, not a polymer — because it is one.
What has happened is ordinary. Cooking fats and food residues build up in a thin layer over the seasoning, particularly if the pan gets a quick rinse rather than a proper scrub, and particularly with sugary or starchy foods. Left on the shelf, that layer oxidises slowly, thickens, and turns sticky and slightly rancid-smelling.
The fix takes twenty minutes and involves nothing dramatic: very hot water, a squirt of detergent, a stiff brush or a chainmail scrub, and real effort. Detergent will not harm a cured film — modern washing-up liquid has not contained lye for generations, and the never soap rule dates from when it did. Dry the pan on the hob, wipe a trace of oil in while it is warm, and it is done.
If the surface underneath comes up black, even and slick, you had good seasoning the entire time.
When a full strip is genuinely warranted
Three situations, and only three.
First, a film built from a non-drying oil that has stayed soft for weeks. That coating has no route to hardening, because the chemistry is not there. It has to come off. Olive oil, coconut oil, tallow and lard builds all end up here if the pan is not in constant heavy use.
Second, contamination. A pan seasoned over a layer of old carbon, or over flash rust that formed between stripping and coat one, has a defect built into the bottom of the film. Everything above it will eventually delaminate along that plane. Better to take it back to iron.
Third, decades of accumulated carbon — the thick, lumpy, matte-black crust that builds on a pan used hard for years and never scrubbed. It is not seasoning, it is carbonised food, and it holds heat unevenly and flakes into whatever you cook.
For everything else, the hot wipe-back and rebake in the fix table is the correct move, and it takes ninety minutes rather than a fortnight. A lye bath runs three to fourteen days; an oven-cleaner bag runs one to three. Neither is worth reaching for over a fault you have not properly diagnosed.
What a finished film feels like
- Dry. A dry fingertip skates across it with no drag and picks up nothing.
- Matte to satin, not glossy. High gloss usually means either flaxseed or too much oil, and one of those is a warning sign.
- Even in colour across the cooking face, with a slightly patchier look up the walls. That is normal and it never matters.
- Silent under a paper towel. Any grip, warm or cold, means you have a row in the diagnosis table.
- Water beads and rolls rather than spreading into a sheet.
- It survives a wash. If detergent and a brush dull it or lift it, it was never cured in the first place.
The thing to hold on to: sticky is the most common cast iron complaint and the least serious one. The iron is untouched. Nothing structural has happened. You are adjusting a surface treatment that can be redone as many times as you like, and the only real cost of getting it wrong is an hour of oven time.
