Cast Iron Brands Compared: Wall Thickness, Weight and Surface Finish by Maker
Three specs separate every current maker: surface finish (sand-cast, machined or polished), rim wall thickness (2.4 to 4.6 mm), and mass at a given diameter (4.0 to 8.1 lb for a 10-inch pan). Those three predict release, thermal response and how the pan feels in one hand better than any brand story, and the makers charging the most are mostly selling you the first spec.

Three numbers tell you almost everything: how the cooking surface was finished, how thick the wall is at the rim, and what the pan weighs at a given diameter. A machined 2.7 mm pan at 4.5 lb and a sand-cast 4.3 mm pan at 5.4 lb are different tools, and no amount of copy about heritage foundries changes that.
The premium end of the market is essentially selling one thing: a machined or polished cooking surface, which is what every American pan had before the 1960s and what almost none has had since. Whether that is worth four to six times the price of a Lodge is a real question with a defensible answer either way, and this page gives you the specs to decide rather than the verdict.
Masses below are for the maker's 10-inch-class skillet and are stated as ranges, because casting varies and published figures do not always match what turns up on a scale.

The useful question is not whether Field beats Lodge — it does on finish and mass — but whether Field beats Stargazer, and whether Lodge beats Victoria. Finex is the outlier and worth calling out. At 7.6 to 8.2 lb for a 10-inch pan it is heavier than any period skillet of the same diameter ever cast, roughly double a Butter Pat. The octagonal rim genuinely works — eight pour points means you never rotate the pan to find one — and the coiled handle stays touchable longer than anything else here. It is also the pan most likely to end up unused because of what it weighs.
Utopia is in the table as the honest floor of the market rather than as a recommendation. It will cook, the casting is fine, and the factory finish is patchy enough that most owners re-season it before first use. That is not a scandal at its price; it just means the sticker is not the whole cost.
Three specs predict almost everything else
Surface finish predicts release. A machined surface starts with fewer peaks and valleys, so a thin seasoning film covers it evenly and behaves near-nonstick within a handful of cooks. A sand-cast surface needs the film to fill the texture before it gets slick, which takes months of real use rather than one afternoon of oven work. Both end up good. One takes considerably longer.
Wall thickness predicts thermal response and, indirectly, everything about how the pan behaves on a burner. A 2.6 mm Field wall responds faster to a burner change than a 4.6 mm Lodge wall and holds slightly less reserve when protein hits it. In practice the difference at these thicknesses is small — smaller than the difference between cast iron and carbon steel — but it is real and it is why thin pans feel livelier.
Mass predicts whether you use the thing. This is the underrated one. A 4.3 lb pan comes off the hook for two eggs; a 5.6 lb pan does not, and an 8 lb pan comes down about once a fortnight. Every owner of a heavy premium skillet who ends up reaching past it for something lighter learned this the expensive way.
Surface finish, described properly
Four classes cover the whole market, and the words makers use for them are not consistent.
As-cast, coarse. The pan comes out of the sand mould and gets seasoned as-is. Visible pebbling, distinctly grippy under a fingertip, and the texture stays perceptible even under a mature film. Lodge and most budget makers.
As-cast, fine. Same process with finer moulding media and a tighter shakeout. Smoother than the above but still unmistakably textured. Victoria sits here, as does Staub's matte interior enamel, which is textured deliberately to help browning.
Machined. The interior is cut on a lathe or mill after casting, leaving a satin surface with fine concentric tool marks you can see under a light but barely feel. Field, Stargazer and Butter Pat. This is the finish period foundries used and it is what the premium tier is really selling.
Polished. Machined, then taken further with a finer abrasive to a near-mirror. Smithey is the clearest example. Whether polishing beyond machining does anything measurable for release is honestly unproven — it looks superb, and a satin surface arguably keys the first seasoning coats slightly better.
One thing that is not a finish class: "pre-seasoned". Every pan in the table except the enamelled two and the bare-option Stargazer arrives pre-seasoned, and that word says nothing about the metal underneath it.
Where each modern maker sits against the registry
The registry classes referenced here are the era groupings used across this site — machined pre-1960 domestic, post-1960 sand-cast domestic, and so on. Placing a modern pan against one tells you which set of methods and expectations apply to it.

Handles, and the one-hand lift
Every solid cast handle gets hot, because it is a continuous piece of iron attached to a hot pan. The variables are how fast and how far up. A thick straight bar conducts heat efficiently along its whole length and is untouchable within three or four minutes on gas. A thinner, flared or tapered handle has more surface area per unit of cross-section, sheds heat to the air faster, and stays usable noticeably longer.
Finex sidesteps the physics with a coiled stainless spring, which is a poor conductor in that geometry and full of air. It stays touchable far longer than anything else here. It also traps grease in the coils and is awkward to clean properly, which is the trade.
Handle length changes the load on your wrist more than mass does. A long handle gives leverage for tilting and basting but puts the pan's centre of mass further from your hand, so a 4.5 lb pan with a long handle can feel heavier in use than a 5 lb pan with a short one. If you are choosing between two pans on paper, this is the spec that will not show up until you are holding them.
Helper handles matter above about 7 lb, and every honest maker fits one at the sizes where they do. If a 12-inch pan has no helper handle, budget for a second oven glove and a lot of care.
What the price actually buys
Machining. That is the honest answer, and it is a real manufacturing operation — a second setup, a cutting tool, cycle time, scrap. Roughly speaking, going from a sand-cast interior to a machined one is what separates a budget pan from a premium one, and everything else in the price is finish quality, packaging and the size of the operation.
It buys consistency too. Premium makers reject castings that budget makers ship, so the pan you receive is closer to the pan in the photographs. Anyone who has bought four cheap skillets and found four slightly different objects understands the value of that.
It does not buy better iron. Grey cast iron is grey cast iron; the alloy chemistry across this table is not meaningfully different and nobody in the category is running an exotic recipe. It does not buy better heat distribution either — that is set by thickness and geometry, both of which are printed in the table above and neither of which correlates with price.
It does not buy a longer life. A Lodge bought today will outlive its owner exactly as reliably as a Butter Pat will. The premium tier is buying you a better starting surface and a lighter pan, not a more durable one.
Picks, stated plainly
Best overall: Stargazer. Machined surface, wall under 3.5 mm, mass in the vintage band, and the best-considered handle of any solid-cast pan on the list. It gets the highest IronGrade here because it gives up the least in any single column.
Best value by a distance: Lodge. It costs a fraction of the premium tier, it will last forever, and the only thing you give up is a few months of use before the sand-cast texture fills in and the pan goes slick. Buy the 10.25 in, cook on it weekly, and stop reading reviews.
Best if weight is your problem: Butter Pat, with Field close behind. Four to four and a half pounds for a 10-inch pan is the vintage weight class, and it is the difference between a pan you use and a pan you admire.
Buy Le Creuset or Staub as a lidded pot, not as a skillet. The acid tolerance is the reason to own enamel and a lidded pot is where that capability lives.
Skip Finex unless you have specifically decided you want an 8 lb skillet. It is beautifully made and the handle is the best in the category; it is also twice the mass of a Butter Pat, and mass is the spec that decides whether a pan gets used.
