In a cast iron skillet, sauté the chorizo until it is thoroughly cooked, about 5 minutes.

Remove and set aside the cooked chorizo.

To make a roux, pour the olive oil into the skillet and whisk in the flour.

Cook for 30 seconds, then add the milk and stir to combine.

Cook until the mixture thickens, about 5 minutes.

Reduce the heat to low and reintroduce the chorizo, as well as the Oaxaca cheese pieces, cilantro, and Mexican blend cheese to the skillet. Mix until everything is well blended.

Cheddar should be sprinkled on top.

Place under the broiler until bubbling on top.

Allow 5 minutes to cool before serving with Pico de Gallo and corn chips.
