  1. In a cast iron skillet, sauté the chorizo until it is thoroughly cooked, about 5 minutes.

  2. Remove and set aside the cooked chorizo.

  3. To make a roux, pour the olive oil into the skillet and whisk in the flour.

  4. Cook for 30 seconds, then add the milk and stir to combine.

  5. Cook until the mixture thickens, about 5 minutes.
