  1. Preheat the oven to 425 degrees Fahrenheit.

  2. Using a paper towel, pat the chicken thighs dry. Combine the salt, garlic powder, and pepper in a small bowl, then season the meat on both sides with it.

  3. Heat 1 to 2 tablespoons olive oil in a cast-iron skillet over medium-high heat until hot. Place the skin-side down chicken thighs in the pan and cover with a splatterguard. Cook for 7-9 minutes without moving the pan to allow the fat to render and the skin to crisp up.

  4. Toss the chicken pieces over with tongs once they have been released from the pan and have a nicely browned crust on the skin. Transfer the skillet with the chicken to the oven and roast for 18-20 minutes, or until the chicken is cooked through and an instant-read meat thermometer reads 165 degrees Fahrenheit.
